Raspberry Trifle Cupcakes

I had a day off work today so I decided to finally get back into my baking. Working in a cupcake shop has definitely affected my willingness to bake, probably because I've been too distracted by buying all the cakes from work to try, hehe. But, I've tried most of them now, so I'm more than ready to get back into my own baking. 

I attempted the Raspberry Trifle Cupcakes from the Hummingbird Bakery Cake Days book for my 100 Hummingbird Bakery Recipe Challenge. They were hard work compared to a lot of cupcakes I've tried before, but they turned out great in the end. The vanilla sponges were very straight-forward, but then you have to make a custard, which I'd never done before. My first try was a disaster. I don't know if I used the wrong type of saucepan or had the heat on too high or what, but I ended up with a lumpy mess that resembled a cross between scrambled egg and rice pudding! Yuck. Thankfully, my second attempt was a success. :)

The custard was the only tricky bit. Then it is a case of waiting for it to cool down and mixing it with whipped cream. The sponges are filled with fresh raspberry and raspberry jam and a little of the custard/cream mixture, then the rest goes on the tops. 

(That sponge without the topping got a bit overcooked, whoops, and I ran out of custard for it too. That one might have to go in the freezer...)

The ones with sprinkles on have lots of raspberry jam in and no fresh raspberries because for some strange reason my boyfriend hates berries :P

In conclusion, these were a little stressful to make when I mucked up the custard, but totally worth the effort. It's nice to have a cupcake that isn't topped with the usual butter frosting. I don't actually like traditional trifles but these are heaps nicer!
